July 2008Only another month left of "winter”….bring on the spring weather! The rain has been welcomed by the vines, the gardens and even the dam is looking a little healthier now. The vines have been pruned and begin their new growth cycle, and the bottling is almost complete os some varieties as planning for the next vintage is well and truly underway. Some people have booked in their Christmas Functions, while March and April wedding dates have filled up fast. For those that are still considering a 2009 wedding or function, we still have some January and February dates available. Spring and Summer 2009 also has many dates to choose from. Remember our Gazebo dinners in summer: $95 per person for your own candlelit table in the gazebo amongst the vines: 3 course dinner and a bottle of wine. Book early this year!! Dining Out EtiquetteOne regular customer recently asked about the "rule” of starting before all meals are delivered to the table: while it is generally thought that correct etiquette is to wait until everyone has their meals, it is actually not the case. It is now well accepted, especially when you have larger groups, to start eating when your meal is placed in front of you. Otherwise it may get cold and not be at its best by the time the whole table is served! Remember your wait person only has two hands!! On the flip side, the table should not be cleared until all guests are finished. Knives and forks should be placed together on the plate to indicate that you are finished. Chef's Table Dinner #8Are you ready for a roasting? As a finale to the Sunday Roast Lunch on offer throughout August, George and the kitchen brigade will prepare Roast Dinner. Not just your boring old roast though: such things as suckling pig, duck and turkey will be on offer. The dinner will be held on Friday August 29th at 7pm. $70 per person includes 4 course dinner and wine. FarewellIn mid July we said a very sad farewell to our apprentice Luke Hetherington. Luke began his apprenticeship with us nearly 4 years ago, and was the last of the "old Rustic Charm” gang that made the move with us in 2005. We are very proud of Luke’s achievements over the time spent with us and he has proved himself to be a very capable young Chef. We wish him all the best in his travels. Cellar Door News![]() Bottling has commenced down in Lilydale with the 2008 Sauvignon Blanc and Rose. The 2008 vintage was a particularly challenging one for Sauvignon Blanc with the high temperatures and rapid ripening that resulted. Grape sugar levels rose ar a rate not previously seen in our vineyards. Thanks to the foresight and efforts of our vineyard manager Luke Atkins and winemakers Jeff Wright and Keith Salter we are very pleased with the preliminary tasting's undertaken in June. We look forward to the release of the 2008 Sauvignon Blanc later this year. Having already received 3 medal in the Yarra Valley Wine Show over the last 4 years for our Sauvignon Blanc, we have high hopes for the 2008 vintage Don’t forget Shedfest on October 11th and 12th this year.
