April 2008The fires are crackling, we've enjoyed a little rain and a lot more sunshine, but winter is just around the corner. Daniel and the kitchen team have been testing some winter dishes to tempt you with over the coming months. On Wednesdays and Thursdays throughout June and July come and dine with us and when you purchase 2 main courses, you will receive a complimentary cheese platter or dessert platter for 2!. Or, book a romantic getaway at Wallace House and stroll down for an intimate fireside dinner. Book during June and July and receive a complimentary cheese platter upon arrival. Winter TradingFrom May to August we will be closed on Mondays. The exception being Queens' Birthday weekend June 9th when we will be open for lunch only and Cellar Door tastings. This weekend is always busy, so remember to book ahead. Chef's Table Dinner #7 - Pie & Beer Friday 30th May 7pmPlaces still available! Enjoy a unique 4 course dinner of pie creations, with an offering of specially selected beers (with the assistance of Colin Penrose, owner of the Brewers Choice shop in Woori Yallock. Of course, our regular wine list will also be available. Keep an eye out for the next newsletter when we will share a pie recipe with you! $50 per person - 4 course dinner and a bag of goodies! Accommodation available. ChestnutsYes, John Morton will be back to roast chestnuts during May. He will have his chestnut roaster on Friday May 2nd to coincide with our Cellar Door night. He will then be back on the 25th May. John's presentations are always informative and fun. New chestnut recipés will be available, and on some nights our friendly staff may also indulge in roasting chestnuts in the open fire for you to enjoy with your coffee or glass of port after dinner! Christmas FunctionsYes, it may only be May, but do not leave it to the last minute. Last year many people were disappointed that there preferred date was not available for their Christmas function in 2007. We are currently taking bookings for Christmas functions of more than 30 guests. No need to do much more than just book in your date and pay your deposit before July 31st. Our Events Manager will then be in touch in October to start to work out the details to ensure that your event is smooth running and stress free. Choose one of our packages, or design one yourself with the assistance of our Events Manager. Extras such as decorations, flowers and placecards can also be arranged. |

RecipéChestnut Crumble We use this easy to prepare topping on stewed apple and rhubarb mixed with some roasted and roughly chopped chestnuts.
Place in food processor and combine until mixture resembles breadcrumbs. Mix can be stored in an airtight container in the fridge for up to a week. Place stewed fruit mixture into individual ramekins, top with crumble mix (up to 1cm thick) then bake in moderate oven for 20-25 minutes, or until topping is golden. Serve with a dollop of Yarra Valley Clotted cream or a scoop of vanilla ice cream. Coming Events
