December 2007Welcome to our final newsletter for the year! As we head towards a new year, all of us here at Rustic Charm and Wild Cattle Creek would like to thank you for your support and patronage during the year and wish all of you and very merry and joyful Christmas season. As a enews recipient, we would like to extend an invitation to you enjoy a complimentary cheese platter when you dine with us during December or January. Simply download and print the voucher. Our new menu has kicked off this week. Come and try the trio of trout as a light lunch or entrée, apple balsamic glazed pork will be a popular main course and not to mention Kangaroo has been reinvented and remains on the menu as always. Sticky wine syrup poached pear and choc mint parfait make for delicious summer desserts and keep an eye on the specials board as some of the freshest produce, such as local cherries and Brad's zucchini flowers, will be used to create exciting additional dishes! The balcony is really getting a workout as the nights remain warm and customers are being eased into a relaxing night with the magnificent sunsets over the dam. The recent storms have also made lasting impressions on guests! If you are wanting to enjoy a table out on the balcony, request it when you book to avoid disappointment. Our apologies for not including a recipe in this newsletter…there is too much other news, so we will ensure a very special recipe (or two) next edition! We also ask that during this busy time, you book ahead as many nights (and lunches!) are already heavily booked. Please also be aware that we will be closed Christmas Day and Boxing Day this year as we are unable to get fresh deliveries. New Chef![]() Yes, at long last Dean finally got away and in November we welcomed a new addition to the kitchen team, Daniel Comar. Daniel has already brought with him enthusiastic ideas. A "late starter" as a Chef, he has had extensive restaurant and winery experience in both Yarra Valley and the city; most recently he was at Evelyn County in Kangaroo Ground, but previously worked at Pure South at Southbank. He has also just returned from a gastronimique honeymoon throughout Europe with plenty of fresh ideas which you may see crop up on the new menus! Chef's Table Dinner #6 - SeafoodChef's Table Dinner #6 will be, by popular demand, Seafood. We have secured a source to fly direct from Queensland and George's creations are sure to please. It will be served table buffet style so a great selection of flavours is guaranteed. For $90 per person you can enjpy a sumptious seafood feast complimented by Wild Cattle Creek wines. Keep Friday January 25th free and organise a table of friends. Book early to avoid disappointment. New Years Eve![]() This year, Mainstream will be playing and guaranteed to get you up and dancing. Cellar DoorOur 3 bottle gift pack makes for a great gift for that special person who has everything! Boxed in a stunning black presentation box, it is great value at just $50. Also, the Super Six Special: 6 bottles of Cabernet Merlot 2003 for $50! Now drinking at its best, we have to practically give this away to make room in our cellar for the new vintage stock on its way! Vintage ReportAs can be seen by the amount of foliage on the vines, season 2008 is well underway. The vines are showing a lot of vigour due to recent weather conditions – higher temperatures amongst some very much appreciated heavy rains. Unfortunately these conditions also increase disease pressure considerably. On the positive side, dams at both Wandin and Yarra Junction have been topped up and now near full capacity and irrigation has commenced 2 weeks later than last vintage. At this time of year "wine lifting" occurs in the vineyards. This practice elevates and opens up the canopy, improving sunlight penetration and facilitating a more even fruit ripening. The Wild Cattle Creek Sangiovese planting is now in its second year and progressing nicely. We expect to pick the first crop in 2009, so stay tuned as we expand our range. Summer BreakfastAt Daniel's instigation, we will be offering Sunday breakfast throughout January and February. The breakfast menu will operate from 9.00am to 10.30 am and offer favourites such as Breakfast with the lot, Eggs Benedict and bircher muesli. You can enjoy the morning scenery from the balcony, or choose to stay indoors. For groups of 12 or more we can offer you a set price option. Please ring and book your breakfast table! Dining in the VinesEnjoy a romantic and very intimate dinner in your very own Gazebo for that special occasion. Or purchase it as a gift for special friends or family. You can complete the package with overnight accommodation at Wallace House. Our chefs will prepare an individual 4 course menu for you and you will have your own attendant to service you in the recently completed Gazebo overlooking the vines and the dam. $95 per person includes your exclusive dinner and a bottle of Wild Cattle Creek wine. Add on accommodation for a complete package of $195 per person twin share. Or, you may also like to book a limousine to pick you up and take you home. Please call Louise for further information or email. Grape GrazingDuring the Yarra Valley Grape Grazing Festival, we will be offering a Grazing lunch. For $35 per person you can have a tutored wine tasting in the Cellar Door and then enjoy a 2 course Yarra Valley lunch in the restaurant. The wine tasting sessions will be held at midday on the weekend of February 9th and 10th and then from Wednesday 13th to Friday 15th (for those wanting to avoid the weekend rush!) The cellar door will also be offering exclusive Grape Grazing specials for those that book in for this Grape Grazing event. Get a group of friends together and make a whole day in the valley! We are happy to offer suggestions of other places to visit. Coming Events
