January 2007

We hope that you have all enjoyed your Christmas and New Year and welcome to 2007 and what promises to be an exciting year at Wild Cattle Creek.

It has now been 2 years and we are continually evolving the business to meet customer demands! Our Chef's Table dinners in particular have been well received and we will continue with these throughout the year on a regular basis, with varying themes

Sunday afternoon music will also continue throughout the year (including winter months!), so keep an eye on our website for those dates.

We will be changing our operating hours as of February 1st, so please check below for changes.

During this busy period, please remember to ring ahead to book your table to avoid disappointment.

Chef's Table Dinners

Our Chef's Table dinners were both a success, and George is now preparing something special(and different for Rustic) for February 2nd 2007. An Indian night will be held as our "farewell" to our recently qualified Chef Dean, who will be heading off overseas in April. George has prepared a special menu featuring the cuisine of Northern and Southern indian cuisine, served in a buffet style.
Places are filling fast, and are limited, so please book your table now.

Chef's Recipe

Rose and Strawberry jelly

We use our Wild Cattle Creek Rosé and local strawberries to make this scrummy jelly! Over summer it has been a popular dessert – especially when served with some home made berry ice cream…good old fashioned jelly and ice cream with an adult flavour!

200 ml water 200gm sugar
200ml rose ¼ cup apple juice
3 tsp gelatine (dissolved) 1 punnett strawberries, washed and sliced
4 individual serving glasses.
  1. In a saucepan over medium heat, dissolve sugar into water until it has a thick syrup consistency. Allow to cool
  2. Dissolve half the gelatine as per instructions, allowing to cool. Combine with half the sugar syrup, half the wine and half the apple juice. Whisk lightly.
  3. In individual glasses, line bottom with strawberries and then evenly pour a thin layer of jelly into each.
  4. Refrigerate this first layer until slightly set.
  5. Repeat step 2 with the remaining liquid ingredients and then place another layer of strawberries upon the first set layer. Evenly distribute the remaining jelly between the glasses on top of the first layer. Refrigerate until set.
