WinterWelcome to winter! The cold weather certainly set in quick, and the vines are now bare as they head into preparing for the next vintage. Inside, the open fires are crackling and best enjoyed with a glass of red or pre dinner cocktail in the wine bar before dinner. You may still find Jeynelle roasting chestnuts in the open fire at night for all to enjoy. Thanks to John Morton for supplying the chestnuts throughout May and our Sunday afternoon Chestnut session was great fun and very educational. Chestnuts still have a place on the winter menu, as the chefs have been inspired as a result of Chestnut month and John’s advice. A reminder to all that we are closed Monday and Tuesdays during winter, but still open for Lunch and Dinner from 11.30am Wednesday to Sunday.

Sautee onions and garlic in butter in large pot until transparent. Add cauliflower and stock. Simmer for 25 minutes, until cauliflower is soft. Add blue cheese. Simmer for a further one minute. Puree in blender and season to taste.
Enjoy with some fresh crusty bread and a glass of Wild Cattle Creek Pinot Gris.
Wallace Homestead, the original homestead at Wild Cattle Creek, is now available for accommodation. The Bridal Suite, suitable for couples, enjoys magnificent views over the vineyard, large ensuite and has a fully equipped kitchen. Wallace House has two bedrooms, a large clawfoot bath, log fire and overlooks the beautiful cottage gardens. Both suites have TV, CD, and DVD player amongst other little luxuries. For a special gift, we have dinner, bed and breakfast package available for $350 per couple. It includes a two course dinner, a bottle of wine, chocolates and breakfast hamper. 2005 Pinot Gris is an excellent food wine and in particular goes well with the vegetable and fetta parcels on the winter menu.
2005 Chardonnay is very similar to 2004, and is a light easy drinking Chardonnay with only subtle oak. It therefore compliments light chicken dishes. In particular, our current dish: chicken with chestnut and mushroom stuffing. It would also go well with a chicken salad.
